Meatloaf... it's what's for dinner!

Fun Fact…. I NEVER liked meatloaf growing up. Like I NEVER ate it when my mom cooked it. I honestly don’t know why, but it just turned me off. Fast forward and now it is one of my family’s go to dinners almost weekly. I have to thank my SIL/BIL for introducing me to this yummy recipe.

I have tweaked it a bit and I like to call it - “throw everything in a bowl, mix it, and bake!”

But seriously, I feel like each time I make it, I adjust the recipe.

INGREDIENTS

  • 1 pound of sausage (I use hot)

  • 1 pound of beef (I usually do 85/15 on low carb days)

  • 1 egg

  • 3/4 cup of panko bread crumbs

  • 1 T of minced onions

  • 2 T Worcestershire sauce

  • 1/4 cup of green pepper (finely chopped)

  • 1/2 T garlic powder

  • 1/2 T onion powder

  • 1/2 T cumin

  • salt and pepper to taste

DIRECTIONS

  1. Preheat oven to 425 degrees.

  2. Mix all ingredients in a large bowl. You have to really knead the meat with all the ingredients. I have found that leaving the meat out about 30 minutes before you start mixing it helps.

  3. Divide the meat into two loaf pans. OR you can divide and cook one loaf and freeze the other loaf!

  4. Cook for 40 minutes!

  5. Enjoy!!
